How to Make a Simple & Delicious Meatloaf

Please share. It makes me happy. :)

It’s been a long day of homeschooling.  Things did not go as well as expected and mom is tired.

What makes matters worse it’s almost time for supper and she doesn’t know what to fix.  She wants to make something that is quick and healthy.

Has this happened to you?  It has happened to me more times than I want to admit.

Ingredients

1 lb. ground beef

1 medium-sized onion – chopped

1 small can of cream

1 large egg

½ to ¾ package of crackers – crushed

Salt and pepper – to taste

1 can (14.5 ounces) of diced tomatoes

Preparation Time – 35 to 40 minutes

Servings – 6 – 8

Instructions

Combine the ground beef, onion, cream, egg, salt, pepper, and crackers until well mixed.  I find mixing the ingredients with my hands to work the best.

Place ingredients into a 13×9 pan sprayed with oil.  I usually form my meatloaf into an oval shape for no particular reason.

Pour the tomatoes with the juice over the meatloaf.

Bake for 30 minutes.  Check for doneness.  Meatloaf is ready when the beef is no longer pink.

It’s that simple.
