It’s 4:30 in the afternoon and there’s nothing ready to prepare for supper! What’s there to fix? A frozen pizza or leftovers from two nights ago are options. Or we can all go out to eat.
Does that sound all too familiar? Homeschool moms (or any mom for that matter) are busy. Sometimes we don’t have time to think ahead when it comes to fixing supper.
That’s when we need a recipe that doesn’t take a long to fix.

Goulash is my mama’s recipe. She learned how to cook using a pinch of this and a little of that. I was able to translate it into actual amounts for those of us who did not learn how to cook as she did (like me.)
1 lb. ground beef
One medium onion, diced
1 can (14.5 ounces) of diced tomatoes
One bottle of tomato juice
8-ounce box of macaroni
1/3 cup of sugar
Salt and pepper to taste
16 ounces of Water – the more water you add, the soupier the goulash will be
Preparation Time – 35 to 40 minutes
Servings – about 8
Fry the ground beef and diced onion together until done. Drain off any grease.
Assemble the other ingredients into a large pot while the ground beef and onion are frying. Heat on medium.
Add the fried ground beef and onion mixture to the large pot.
Simmer until the goulash has thickened.
That was quick and easy.
